Baked Chicken and Roasted Brussels Sprouts – A delicious, low-carb meal that is easy to make and sure to please – baked chicken served with a side of roasted Brussels sprouts.
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons Italian seasoning
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 2 pounds Brussels sprouts, halved
- 2 tablespoons butter
Instructions:
- Preheat the oven to 375°F.
- Place the chicken breasts in a baking dish. Drizzle with olive oil and sprinkle with Italian seasoning, garlic, salt, and pepper.
- Bake in the preheated oven for 25 minutes.
- Meanwhile, place the Brussels sprouts on a separate baking sheet. Dot with butter and season with salt and pepper.
- Place the Brussels sprouts in the oven with the chicken for the last 10 minutes of cooking.
- Serve the chicken and Brussels sprouts together. Enjoy!
