Baked Chicken with Roasted Brussels Sprouts

Baked Chicken and Roasted Brussels Sprouts – A delicious, low-carb meal that is easy to make and sure to please – baked chicken served with a side of roasted Brussels sprouts.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Italian seasoning
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 pounds Brussels sprouts, halved
  • 2 tablespoons butter

Instructions:

  1. Preheat the oven to 375°F.
  2. Place the chicken breasts in a baking dish. Drizzle with olive oil and sprinkle with Italian seasoning, garlic, salt, and pepper.
  3. Bake in the preheated oven for 25 minutes.
  4. Meanwhile, place the Brussels sprouts on a separate baking sheet. Dot with butter and season with salt and pepper.
  5. Place the Brussels sprouts in the oven with the chicken for the last 10 minutes of cooking.
  6. Serve the chicken and Brussels sprouts together. Enjoy!
