Baked Cod with a Side of Roasted Asparagus

This delicious recipe combines a succulent cod fillet with a side of roasted asparagus. Baked to perfection, the cod is juicy and flavourful while the asparagus adds a hint of nuttiness. An easy and healthy meal that is sure to please.

 

Ingredients:

-2 cod fillets

-1/2 teaspoon garlic powder

-1/2 teaspoon paprika

-1/4 teaspoon salt

-1/4 teaspoon pepper

-1 tablespoon olive oil

-1 bunch of asparagus, trimmed

 

Instructions:

-Preheat the oven to 425°F.

-Grease a baking dish with olive oil and place the cod fillets in the dish.

-Sprinkle the garlic powder, paprika, salt, and pepper over the fillets.

-Drizzle the olive oil over the top of the fish.

-Roast the cod in the oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

-Meanwhile, place the asparagus on a baking sheet and drizzle with olive oil.

-Roast in the oven for 12-15 minutes, or until the asparagus is tender.

-Serve the cod and asparagus with desired toppings and enjoy!
