Baked Salmon with a Side of Roasted Vegetables

Ingredients:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups mixed vegetables of choice (such as carrots, bell peppers, onions, and mushrooms)
  • 1 tablespoon Italian seasoning

Instructions:

  • Preheat oven to 400°F.
  • Place salmon fillets on a parchment-lined baking sheet and drizzle with olive oil.
