Ingredients:
- 2 tablespoons olive oil
- 1 small onion, chopped
- 1 red bell pepper, diced
- 1 cup frozen mixed vegetables
- 2 cups cauliflower rice
- 2 eggs, lightly beaten
- 2 tablespoons low-sodium soy sauce
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Add onion and bell pepper and cook until softened, about 5 minutes.
- Add frozen vegetables and cauliflower rice and cook until vegetables are heated through and cauliflower rice is tender, about 5 minutes.
- Push vegetables and cauliflower rice to the side of the pan and add eggs.
- Cook eggs until lightly scrambled.
- Mix eggs with vegetables and cauliflower rice and stir in soy sauce.
- Season with salt and pepper to taste.
