Keto Fried Rice with Cauliflower Rice, Vegetables, and Eggs

Keto Fried Rice: Satisfy your cravings with this low-carb alternative to traditional fried rice. Made with cauliflower rice, vegetables, and eggs for a delicious keto meal.

 

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 1 cup frozen mixed vegetables
  • 2 cups cauliflower rice
  • 2 eggs, lightly beaten
  • 2 tablespoons low-sodium soy sauce
  • Salt and pepper to taste

Instructions:

  • Heat olive oil in a large skillet over medium-high heat.
  • Add onion and bell pepper and cook until softened, about 5 minutes.
  • Add frozen vegetables and cauliflower rice and cook until vegetables are heated through and cauliflower rice is tender, about 5 minutes.
  • Push vegetables and cauliflower rice to the side of the pan and add eggs.
  • Cook eggs until lightly scrambled.
  • Mix eggs with vegetables and cauliflower rice and stir in soy sauce.
  • Season with salt and pepper to taste.
  • Serve warm.
