Keto pancakes with almond butter

This easy and delicious keto pancake recipe is perfect for a low-carb breakfast! Made with almond butter and almond flour, these fluffy pancakes are gluten-free and packed with protein and healthy fats. Enjoy them with your favorite topping for a satisfying and nutritious start to the day.

 

Ingredients:

-1 cup almond flour

-2 tablespoons coconut flour

-1 teaspoon baking powder

-1/2 teaspoon salt

-1/4 teaspoon xanthan gum

-2 large eggs

-1/4 cup almond milk

-2 tablespoons melted butter or coconut oil

-2 tablespoons almond butter

Instructions:

-In a medium bowl, mix together the almond flour, coconut flour, baking powder, salt, and xanthan gum.

-In a separate bowl, whisk together the eggs, almond milk, and melted butter or coconut oil.

-Add the wet ingredients to the dry ingredients and mix until just combined.

-Heat a large skillet over medium heat and grease with butter or coconut oil.

-Pour 1/4 cup of the batter into the skillet and spread out slightly.

-Cook for 2-3 minutes or until the edges are golden brown and the center is cooked through.

-Flip the pancake and cook on the other side for another 2-3 minutes.

-Repeat with the remaining batter.

-Serve with almond butter and desired toppings. Enjoy!
