Shrimp Scampi with Zucchini Noodles

Ingredients:

– 2 tablespoons olive oil

– 2 cloves garlic, minced

– 1/2 teaspoon red pepper flakes

– 1 pound shrimp, peeled and deveined

– Juice of 1 lemon

– 2 tablespoons chopped parsley

– 2 medium zucchinis, spiralized

– Salt and pepper, to taste

 

Instructions:

– Heat the olive oil in a large skillet over medium heat.

– Add the garlic and red pepper flakes and cook for 1 minute.

– Add the shrimp to the skillet and cook for 2-3 minutes, until cooked through.

– Add the lemon juice and parsley and season with salt and pepper.

– Add the zucchini noodles to the skillet and cook for 1-2 minutes, stirring frequently.
