Zucchini Boats Stuffed with Ground Beef and Cheese

  • 4 large zucchinis
  • 1 pound ground beef
  • 1/2 onion, chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese

  2. Cut the zucchinis in half lengthwise and scoop out the flesh with a spoon, leaving a 1/2-inch shell.
